Ingredients List:
- Pancake mix
- Flour
- Egg
- Water
- Oil
- Unsweetened cocoa powder
- Red food coloring
- Cream cheese
- Powdered sugar
- Melted chocolate chips or chocolate syrup
Pancake Mix: I love Krusteav mixes. However, you can use your favorite! You will only need a small amount.
Oil: Use a neutral tasting oil. Canola, sunflower or vegetable oil will all work.
Food Coloring: A gel or paste variety of food coloring will give you a better color and you will have to use less of it, than the liquid stuff. See the recipe card for the brand I like.
Chocolate: You can either melt about 1/4-1/2 cup of chocolate chips until smooth or if you have any chocolate syrup on hand, you can also use that.
How to Make:
- In a bowl, whisk together pancake mix, flour and cocoa. Add in egg, water, oil and food coloring. Mix unit fully combined and smooth.
- Preheat a medium size frying pan over medium heat. Add a teaspoon of oil and brush the pan to coat.
- Then, take about 1/4 cup of your batter pour it onto the heated pan.
- Tilt the pan gently to evenly coat it with the batter. It will be thin.
- Next cook it for just a minute ( or until it’s lightly set on the sides), then, flip it. Again, cook the other side for just a minute or so. It is thin, so, it won’t take long to cook.
- Prepare the filling. Start with 3/4 cup of powdered sugar and taste it. If you prefer it a bit more sweet, add in more powdered sugar. I don’t recommend using over an extra 1/4 cup.
- Then, fill the crepes with cream cheese mixture and roll them up.
- Serve them with a dusting of powdered sugar and drizzle of chocolate.
