Now that October is in full swing, it’s time to break out the first pumpkin recipe here at Big Green House. What better way to do that then with doughnuts?

Ingredients List

  • Flour
  • Baking powder + salt
  • Ground cinnamon + pumpkin pie spice
  • Pumpkin puree
  • Egg
  • Butter
  • Brown sugar
  • For glaze: Butter, brown sugar and milk. Plus, powdered sugar, maple extract and corn syrup.

Recipe Notes

  • Be sure to use pumpkin puree! You do not want pumpkin pie mix.
  • If you don’t have any pumpkin pie spice on hand, cloves or nutmeg are a good substitute.
  • Don’t over mix your batter. You want it fully combined, but, don’t beat it to death. Your doughnuts won’t have as soft texture.
  • Also, you don’t have to bring out your big electric mixer for these. A whisk, rubber spatula and two medium size mixing bowls will work just fine.
  • This recipe only makes 6 doughnuts. Keep that in mind if you want a whole dozen. 😉
  • The glaze sets very quickly. So, if you want to top them with sprinkles or any type of garnish, do it immediately after coating the top of your doughnut.

Baked Pumpkin Doughnuts with Maple Glaze are a delicious way to kick off pumpkin season! Soft doughnuts that are baked (not fried!) and drenched with a sweet maple glaze.

Cook Time 10 minutes
Additional Time 30 minutes
Total Time 1 hour 10 minutes

Ingredients

  • 1 cup flour
  • 1 tsp baking powder
  • dash of salt
  • 1 tsp ground cinnamon
  • 1/2 tsp dried pumpkin pie spice
  • 1/3 cup pumpkin puree
  • 1/3 cup brown sugar
  • 1 egg

FOR GLAZE:

  • 2 TBSP butter
  • 1/4 cup brown sugar
  • 1 TBSP + 1 tsp milk
  • 1 1/2 tsp corn syrup 
  • 1 tsp maple extract
  • 1 cup powdered sugar 

Instructions

  1. Preheat oven to 350 degrees. Grease a 6 count doughnut pan.
  2. In a bowl, whisk together flour, salt, baking powder, ground cinnamon and pumpkin pie spice. Set aside.
  3. In another bowl, mix together brown sugar, pumpkin puree and egg. Add flour mixture into pumpkin puree mixture and mix until fully combined.
  4. Divide batter evenly into doughnut pan cavities. Be careful not to overflow pan.
  5. Bake for 8-10 minutes or until doughnuts spring back when touched.
  6. Cool completely before adding glaze.

FOR GLAZE:

  1. In a saucepan, add in butter, brown sugar and milk. Under medium heat, cook until butter is melted and sugar is completely dissolved. Remove from heat and whisk in maple extract and corn syrup. Then, gradually, whisk in powdered sugar and mix until smooth.
  2. Dip the tops of the doughnuts into the glaze and if desired, top with sprinkles. The glaze sets very quickly! If you want to add any type garnish, add in immediately after dipping the doughnuts.
