Funfetti Snack Cake- – your new favorite cake is here! A moist white cake loaded with sprinkles and topped with a creamy buttercream frosting. Make it for your next party or weeknight dessert. It’s perfect for any occasion.

Since making my yellow cake for two, I’ve really warmed to the idea of making smaller versions of different cakes. They are really quick to bake up and it helps when it comes to portion control.
This cake is a standard white cake, but, it’s just a one layer and 9 inches in size. It’s also lathered up with a creamy vanilla buttercream frosting and packed full of rainbow sprinkles.
Fun and yummy. 🎉

Your Ingredients:
- Flour + Salt+ Baking Powder+Cornstarch
- Sugar
- Egg whites
- Buttermilk
- Butter
- Sprinkles
This cake is really easy to make and you only need one mixing bowl to mix it together. In addition to that, you will need a 9 inch baking pan. Round or square. Plus, of course, non stick cooking spray or butter to grease your pan.
A brief note: If you don’t have any buttermilk on hand, simply stir about a tablespoon of vinegar or lemon juice into your milk and let it sit for 5 minutes before adding it to the batter.
This cake is really amazing. Serve it for a party, a weeknight dessert or whenever you just want some cake.

Ingredients
FOR CAKE:
- 1/2 cup butter, softened
- 2/3 cups sugar
- dash of salt
- 1/2 cup buttermilk
- 2 egg whites
- 1 tsp vanilla
- 1 tsp baking powder
- 2 TBSP cornstarch
- 1 cup flour
- 1/3 cup rainbow sprinkles, plus, additional for top
FOR FROSTING:
- 1/2 cup butter, softened
- 1 1/3 cups powdered sugar
- 1 tsp vanilla
- 1 TBSP milk
Instructions
- Preheat oven to 350 degrees. Grease a 9 inch round or square pan.
- In a mixing bowl, beat butter and sugar until fluffy. Add in egg whites and beat until combined. Then, add in vanilla and buttermilk, beat until mixed.
- Add in flour, cornstarch, salt and baking powder and beat until combined. Be sure to scrape down the sides of the bowl while mixing.
- Stir in sprinkles.
- Spread batter into prepared pan and bake for 20 minutes or until toothpick inserted comes out clean.
- Let cake cool for 10 minutes before removing from pan and cool completely before frosting.
FOR FROSTING:
- Beat butter and vanilla until fluffy. Then, add in powdered sugar and milk and beat until smooth and fully combined.
- Frost on cooled cake. If desired, sprinkle top with additional sprinkles.
