I purchased this iron skillet about five or six years ago and it quickly became one of my favorite skillets.
Can people have a favorite skillet? Is that weird? Do you have a favorite skillet? Just wondering.
I use this skillet, plus, a cast iron dutch oven for a wide variety of cooking and baking. We even bought my husband the cast iron charcoal grill for Father’s Day this year.
Cast iron is a more pricey investment than your average regular skillet, but, it’s worth it. If taken care of properly, it will last you for years and years.

My latest baking project in a cast iron skillet is a gigantic cookie. A cookie loaded with peanut butter and toffee baking chips. Plus, the toffee chips have a bit of chocolate with them…very yummy.
What Ingredients Do You Need?
- Flour
- Butter
- Sugar
- Brown sugar
- Egg
- Plain Greek yogurt
- Baking soda
- Vanilla
- Peanut butter baking chips
- Toffee baking bits


Recipe Notes
Do I Have To Use an Iron Skillet?
Nope. Any oven safe 10 inch skillet will work for this recipe.
If you do use a cast iron skillet, you won’t have to grease it. However, if you use a regular oven safe skillet, you will have to grease it before adding your dough.
Plain Greek Yogurt
None on hand? You can replace it with sour cream.
Toffee Bits
I used toffee bits with chocolate for mine. But, plain will work just as well. You can find both versions in the same section as the chocolate chips at your local grocery store.

Skillet Peanut Butter Toffee Cookie...because all cookies should be in a big giant skillet. This soft cookie is packed full of peanut butter and toffee chips. Serve up a big slice and don't forget to share!
Ingredients
- 2 cups flour
- 1 tsp baking soda
- dash of salt
- 1/2 cup ( 1 stick) butter, softened
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1 egg
- 1/2 cup plain Greek yogurt
- 1 tsp vanilla
- 1/3 cup peanut butter baking chips + 1 TBSP for topping
- 1/3 cup toffee baking bits + 1 TBSP for topping
Instructions
- Preheat oven to 350 degrees. If needed, grease a 10 inch oven safe skillet.
- In a bowl, whisk together flour, baking soda and salt. Set aside.
- In a mixing bowl, beat butter until creamy. Then, add in both sugars, egg,yogurt and vanilla. Mix until combined.
- Gradually, add in flour mixture and beat until fully combined. Stir in both baking chips.
- Spread dough into skillet. Top with remaining baking chips/bits.
- Bake for 25-30 minutes or until lightly brown. Let cookie sit for 15 minutes before serving.
