Pancake Mix? Yes! If you think about it, it’s really not that odd. Pancake mix contains flour, baking soda, baking powder and salt. All things you would put into your cookies. 👍

I used Krusteav Complete Buttermilk Pancake Mix, but, go with your favorite.

Recipe Notes:

  • Be sure your butter is softened before using. This will give your cookies their soft texture.
  • After making the dough, you will refrigerate it for 1 hour before baking the cookies. If desired, you can refrigerate it for longer or even overnight, if desired.
  • Your cookies will be on the thinner side. Also, make sure to let them sit on the cookie sheet for about 5 minutes after baking. This will help you avoid getting mushy cookies.
