  • Dry pancake mix
  • Vanilla
  • Chocolate chips

Pancake Mix?

Yes! If you think about it, it’s really not that odd. Pancake mix contains flour, baking soda, baking powder and salt. All things you would put into your cookies. 👍

I used Krusteav Complete Buttermilk Pancake Mix, but, go with your favorite.

Recipe Notes:

  • Be sure your butter is softened before using. This will give your cookies their soft texture.
  • After making the dough, you will refrigerate it for 1 hour before baking the cookies. If desired, you can refrigerate it for longer or even overnight, if desired.
  • Your cookies will be on the thinner side. Also, make sure to let them sit on the cookie sheet for about 5 minutes after baking. This will help you avoid getting mushy cookies.

Ingredients

  • 3/4 cup ( 1 1/2 sticks) butter, softened
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1 tsp vanilla
  • 2 cups dry pancake mix
  • 1 cup chocolate chips

Instructions

  1. In a bowl, beat butter with sugars until creamy. Add in egg and vanilla. Beat to combine.
  2. Gradually, add in pancake mix. Beat until fully combined.
  3. Stir in chocolate chips.
  4. Place cookie dough in the refrigerator for 1 hour. In the meantime, preheat the oven to 350 degrees. Line a flat rimmed baking sheet with parchment paper or silicone mats.
  5. When ready, scoop approx 1 TBSP of dough, roll into a ball and place on cookie sheet. Repeat with remaining dough.
  6. Bake for 10-12 minutes. Let cookies sit for 5 minutes, then, remove from baking sheet and cool completely on wire rack.
