
Green Velvet Cupcakes- A festive touch on the classic velvet cupcake! Bright green cupcakes topped with a thick layer of cream cheese frosting.

Ingredients Needed:
- Flour
- Baking soda
- Vinegar
- Butter
- Sugar
- Unsweetened cocoa powder
- Egg
- Green food coloring
- Vanilla
- Milk
- Cream cheese
- Powdered sugar

Butter and Cream Cheese: For the cupcakes and frosting, be sure they are softened. If they are too cold, it could affect the the consistency of both.
Milk: Regular dairy milk or a plant based (cashew, almond, etc) variety will all work.

Recipe Notes:
- This recipe makes just 6 cupcakes, instead of the standard 12. If desired, you can double it for the full dozen.
- Don’t over mix your batter! Simple mix until there are no dry spots left in the batter. Overmixing may give you dense cupcakes.

Green Velvet Cupcakes

A festive touch on the classic velvet cupcake! Bright green cupcakes topped with a thick layer of cream cheese frosting.
Ingredients
- 1/4 tsp baking soda
- 1/2 tsp vinegar
- 3/4 cup flour
- dash of salt
- 1 TBSP unsweetened cocoa powder
- 1/4 cup butter, softened
- 2/3 cup sugar
- 1 egg
- 1 tsp vanilla
- 1/4 cup milk
- 1 TBSP green food coloring
FOR FROSTING:
- 4 oz cream cheese, softened
- 1/4 cup butter, softened
- 1 tsp vanilla
- 1 1/2 cups powdered sugar
Instructions
- Preheat oven to 350 degrees. Grease a 6 count muffin/cupcake pan or line with liners.
- In a small bowl, mix together vinegar and baking soda. Set aside.
- In a bowl, whisk together flour, salt and cocoa powder. Set aside.
- In a mixing bowl, beat the butter and sugar until creamy. Add in egg, vanilla and baking soda mixture. Mix to combined. Gradually, add in flour mixture and milk. Alternating between the two. Add in green food coloring and mix to combine.
- Divided batter evenly into prepared pan. Bake for 20-25 minutes or until toothpick inserted comes out clean.
- Let cupcakes cool completely before frosting.
- Make Frosting: Beat cream cheese and butter until creamy. Add in powdered sugar and vanilla. Beat until totally combined. Frost on cooled cupcakes.
