Strawberry Cupcakes with Strawberry Cream Cheese Frosting- Soft strawberry cupcakes topped with a thick layer of strawberry cream cheese frosting. A great way to celebrate strawberry season!

Ingredients Needed
- Yellow cake mix + Flour
- Strawberries
- Strawberry gelatin
- Eggs
- Oil
- Milk
- Butter
- Cream cheese
- Powdered sugar
- Vanilla
notes
- You can use any brand of cake mix. Be sure to stick with a standard size box (15-18 oz) for this recipe. A butter or vanilla flavor will work best.
- Make sure your butter and cream cheese (for frosting) are both softened before using.
- Gelatin? AKA “Jell-O”. Don’t make it! You will only be using the dry mix. Use any brand, as long as it’s a 3 oz box.
Making Strawberry Puree
You can mash your strawberries with a potato masher, a food processor or a stick blender.
Storage
Keep any leftover cupcakes in the refrigerator. They are best eaten in a week.
Don’t Want Cupcakes? This batter will also work for a 9 x 13 pan or 2- 9 inch round pans. Bake according to cake mix box instructions.
