Strawberry Cupcakes with Strawberry Cream Cheese Frosting

Strawberry Cupcakes with Strawberry Cream Cheese Frosting- Soft strawberry cupcakes topped with a thick layer of strawberry cream cheese frosting. A great way to celebrate strawberry season!

Ingredients Needed

  • Yellow cake mix + Flour
  • Strawberries
  • Strawberry gelatin
  • Eggs
  • Oil
  • Milk
  • Butter
  • Cream cheese
  • Powdered sugar
  • Vanilla

notes

  • You can use any brand of cake mix. Be sure to stick with a standard size box (15-18 oz) for this recipe. A butter or vanilla flavor will work best.
  • Make sure your butter and cream cheese (for frosting) are both softened before using.
  • Gelatin? AKA “Jell-O”. Don’t make it! You will only be using the dry mix. Use any brand, as long as it’s a 3 oz box.

Making Strawberry Puree

You can mash your strawberries with a potato masher, a food processor or a stick blender.

Storage

Keep any leftover cupcakes in the refrigerator. They are best eaten in a week.

Don’t Want Cupcakes? This batter will also work for a 9 x 13 pan or 2- 9 inch round pans. Bake according to cake mix box instructions.

Ingredients

FOR CUPCAKES:

  • 1- standard size box, yellow cake mix
  • 1/3 cup flour
  • 3 oz package, strawberry gelatin
  • 3 eggs
  • 1 1/2 cups fresh strawberries
  • 1/2 cup neutral tasting oil
  • 1/2 cup milk

FOR FROSTING:

  • 1/2 cup fresh strawberries
  • 4 oz cream cheese, softened
  • 1/2 cup (1 stick) butter, softened
  • splash of vanilla
  • 2 1/2 cups, powdered sugar

Instructions

  1. Preheat oven to 350 degrees. Line 2- 12 count muffin/cupcake pans with liners.
  2. In a food processor, with stick blender or with a potato masher, mash strawberries for cupcakes. You should have about 1 cup of puree. Set aside.
  3. In a mixing bowl, beat together dry cake mix, flour and dry gelatin powder. Then, add in eggs, strawberry puree, oil and milk. Beat until fully combined. Be sure to scrape down the sides of your mixing bowl, as you mix.
  4. Divided the batter evenly into prepared pan. Bake for 12-15 minutes or until toothpick inserted comes out clean.
  5. Let them cool completely before frosting.

Make Frosting:

  1. In a food processor, with stick blender or with a potato masher, mash strawberries for frosting. Set aside.
  2. In a mixing bowl, beat butter with cream cheese until fluffy. Then, add in strawberry puree and vanilla. Gradually, add in powdered sugar and beat until fluffy.
  3. Frost on cooled cupcakes.
