Oreo Chocolate Crispy Rice Bars

Ingredients Needed

  • Crispy rice cereal (AKA “Rice Krispies” of brand equivalent
  • Butter
  • Mini marshmallows
  • Vanilla
  • Oreo cookies
  • Mini chocolate chips

Can I Use Large Marshmallows?

Yes! I used a 10.5 bag of mini marshmallows for ours or about 1.5 cups. You will need to use less of the large marshmallows (obviously)so, adjust accordingly.

Do I Have to Use “Oreo” Brand Cookies?

No. Go with your favorite brand equivalent. You can also use a different flavor or type of Oreo cookie. For example, gluten free, double stuff or chocolate filled.

Can I Use Regular Size Chocolate Chips?

Again, yes. Just adjust accordingly.

Additional Notes

  • Be sure to line your baking pan with foil, then, spray the foil with non stick cooking spray. This makes your life so much easier when it comes to getting the bars out of the pan, cutting them and clean up.
  • 💡 Tip: The trick to a soft crispy rice treat? Melt your marshmallow slowly and over low heat. Makes a big difference!
  • Storage: Keep any leftovers in a covered container in the refrigerator. They are best eaten in a week.

Marshmallow-y bars packed full of Oreo cookies, smooth chocolate and crunchy crispy rice cereal. No baking required.

Ingredients

  • 6 cups, crispy rice cereal
  • 15 Oreo cookies, broken into pieces
  • 6 TBSP butter,
  • 10.5 oz mini marshmallows
  • 1/3 cup mini chocolate chips
  • 1 tsp vanilla

Instructions

  1. Line a 9 x 13 baking pan with foil. Then, spray the foil with non stick cooking spray.
  2. In a bowl, mix together crispy rice cereal with broken cookies. Set aside.
  3. In a large saucepan, over low heat, melt butter and chocolate chips. Then, add in mini marshmallows. Stirring frequently, continue over low heat until the mixture is fully melted and smooth.
  4. Gradually, add the crispy rice/Oreo mixture into the melted marshmallow mixture. Stir completely to coat. Carefully spread the mixture evenly into the prepared pan.
  5. Refrigerate for at least an hour before serving. Keep any leftovers in the refrigerator.
