I have always been a sucker for a Little Debbie.

Doesn’t matter what type it is, I’ll probably eat it.  They are just so good.  If you aren’t familiar, Little Debbie is a brand of packaged baked goods.  Everything from Swiss Cake Rolls (kinda like Ho Ho’s) to breakfast muffins. Pretty yummy stuff.

My favorite is their Oatmeal Creme Pies.  They are so good. Weird thing though, my kids don’t like them.  That’s weird, right?   I think so. Anyhoo, because of this, I don’t buy them too often.

That would mean that my husband and I are eating an entire box of Oatmeal Creme Pies all by ourselves. Not really a great idea!

So, I found this recipe a few years back and making these just seemed like a more logical option. These lovelies taste just like the boxed version. #Truth

Ingredients Needed:

  • Flour + Salt+ Ground Cinnamon
  • Butter
  • Brown sugar
  • Molasses
  • Quick oats
  • Egg
  • Powdered sugar
  • Marshmallow fluff

A few recipe notes:

  • If desired, coconut palm sugar can be used in place of brown sugar.
  • These bars can be frosted two ways. First, the classic way of spread it on the top of the bars. Second, frost the top of one bar, then, place another bar on top of the frosting, to create a sandwich. Both ways are delicious!
  • Be sure to keep any leftover frosting in a covered container in the refrigerator.
  • If you don’t have any quick oats, you can use old fashion instead. Simply pulse the old fashion oats a few minutes in your food processor before adding them to your batter. You want them chopped, but, not powdery.

Prep Time 30 minutes
Cook Time 25 minutes
Additional Time 1 hour
Total Time 1 hour 55 minutes

Ingredients

  • FOR BARS
  • 3/4 cup flour
  • 1/2 cup butter, melted
  • 1 egg
  • 1 cup brown sugar
  • 2 TBSP molasses
  • 2 tsp vanilla
  • 1 tsp ground cinnamon
  • dash of salt
  • 1 cup instant oats

FOR FROSTING:

  • 1/2 cup butter,  softened
  • 1 1/2 cups powdered sugar
  • 1 cup marshmallow fluff

Instructions

    1. Preheat oven to 350 degrees. Grease an 8 x 8 baking dish.
    2. In a mixing bowl, mix melted butter, sugar, molasses and vanilla. Add in egg. Mix in oats, cinnamon and salt. Add in flour and mix until just combined.
    3. Spread batter into prepared pan. Bake for 25 minutes or until bake through.
    4. Cool completely before frosting.


FOR FROSTING:

  1. Beat butter and powdered sugar with mixer. Add in marshmallow fluff. Continue beating until fluffy. Frost on cooled bars.
