You are going to notice that I will mention my youngest child on this blog quite a bit.

As previously mentioned, he is 9 years old. He’s also a serious lover of baked good. Perhaps, even more than me. #Shocking

I know this is already my second cupcake recipe and this blog is not even a month old, but, these were his idea and gosh..it was a really good idea.

If you have never filled a cupcake, don’t worry, it’s not tough. Actually, my 9 year old filled these and well, he’s 9. So, yeah, it’s not tough.

Step 1: Take a frosting tip ( we used a 1M) and cut out a hole in the middle of your cupcake. If you don’t have a tip, use a small sharp knife. You don’t want to cut too deep, about 1/4 – 1/2 of an inch.

Step 2. Using a butter knife , gently remove your piece of cupcake.

Step 3: Fill with the filling. Use the premade filling container or use a piping bag. If you don’t have any piping bags, you can use a plastic bag.

Step 4: Gently place your piece of cupcake back on top, then, frost.

A Few Recipe Notes:

The filling: I used a pre made chocolate filling. Yes, I cheated (see above photo) . If you wish to make your filling homemade, here is a recipe for a homemade chocolate ganche that can be used. If you want to use the premade, I found it at Walmart, but, you can also check out the Amazon link in the recipe card.

The bacon: In my opinion, the best way to cook bacon is in the oven. Line a flat rimmed baking sheet with foil, then, spray with non stick cooking spray. Lay the bacon on the baking sheet. Bake in preheated 375 degree for 15-20 minutes or until crispy.

The frosting: It will be on the softer side when it’s first made, but, will firm up once it sets.

Chocolate Bacon Cupcakes with Chocolate Filling! Get out your stretchy pants....it's time for chocolate cupcakes filled with chocolate and bacon

Total Time 2 hours 50 minutes

Ingredients

  • 2 cups flour
  • 3/4 cup unsweetened cocoa powder
  • 1 cup brown sugar
  • 1 cup white sugar
  • 2 tsp baking soda
  • 1 tsp baking powder
  • dash of salt
  • 2 eggs
  • 1 cup hot water
  • 1 cup milk
  • 1/2 cup butter, melted
  • 1 cup cooked bacon, chopped
  • 1 tsp vanilla

FOR FROSTING:

  • 2 cups powdered sugar
  • 1 tsp vanilla
  • 1 cup chocolate chips
  • 1 cup ( 2 sticks) butter, softened

FOR FILLING:

FOR CANDIED BACON:

  • 4-6 slices of bacon
  • 1/4 cup brown sugar

Instructions

  1. Preheat oven to 375 degrees. Line a cupcake pan with cupcakes papers.
  2. In a bowl, whisk together flour, cocoa powder, baking soda, baking powder and salt. Set aside.
  3. In a mixing bowl, beat melted butter with both sugars. Then, add in vanilla and eggs. Add in milk, hot water and flour mixture. Alternate between the three, starting with the flour. Beat until combined. Your batter will be thin.
  4. Stir in cooked bacon pieces.
  5. Divide batter evenly into pan. Keep in mind: this recipe will make 24 cupcakes. You will have to use two 12 count pans or one pan and two batches.
  6. Bake 18-20 minutes or until toothpick inserted comes clean.
  7. Cool completely before filling and frosting.

FOR FILLING:

  3. Fill with the filling.
  4. Gently place your piece of cupcake back on top, then, frost.

FOR FROSTING:

  1. In a saucepan or in microwave, melt chocolate chips until smooth. Set aside just until they are room temperature.
  2. In a mixing bowl, beat butter until fluffy. Slowly add in powdered sugar and vanilla. Then, drizzle in cooled chocolate and beat until fully combined and fluffy.
  3. Frost on cooled cupcakes.

FOR CANDIED BACON:

  1. Preheat oven to 400 degrees.
  2. Line a rimmed baking sheet with foil. Spray with cooking spray.
  3. Lay bacon on prepared baking sheets and sprinkle evenly with brown sugar ( approx 2-3 tsp per slice).
  4. Bake for 12-15 minutes, turning and coating the bacon with sugar halfway through cooking.
  5. Remove from oven once bacon is crisp and a dark brown color.
  6. Let it cool/drain completely. Then, chop into desired sized pieces.
