This is my favorite, go-to recipe for cornbread. It’s very simple and tastes amazing. It’s perfect for just about any meal or for a snack.

Your Basic Ingredients

  • Flour
  • Cornmeal
  • Salt + Baking powder
  • Maple syrup
  • Buttermilk
  • Melted butter

Recipe Notes

No mini muffin pan?

You can also use a regular size muffin pan (bake 15-18 minutes), a 9 inch round pan or 9 inch iron skillet ( bake 20-25 minutes) for this batter.

No maple syrup?

Honey can be used instead.

No buttermilk?

Stir 1 tablespoon of vinegar or lemon juice into 1 cup of milk. Let it sit for 5 minutes before adding to batter. If you don’t have vinegar or lemon juice, using regular milk will work just fine.

No butter?

Use a neutral tasting oil.

Freezing

These freeze well. Toss a few in a freezer safe storage bag and eat whenever you wish. Heat them up in the microwave for a few seconds or in the oven for a few minutes before enjoying.

Mini Cornbread Muffins! Low fat, low calorie and no refined sugar! These little muffins are a great snack or side dish to any meal.

Prep Time 15 minutes
Cook Time 8 minutes
Total Time 23 minutes

Ingredients

  • 1 cup flour
  • 1 cup cornmeal
  • 1 TBSP baking powder
  • 1/2 tsp salt
  • 2 eggs
  • 4 TBSP (1/2 stick) butter, melted
  • 1 cup buttermilk
  • 1/4 cup maple syrup

Instructions

  1. Preheat oven to 400 degrees. Grease a 24 count mini muffin pan or line with cupcake liners.
  2. In a mixing bowl, mix together flour, cornmeal, baking powder and salt. Then, add in eggs, buttermilk, maple syrup and melted butter.  Mix until combined. Don't over mix the batter.  It's OK for it to be a little lumpy.
  3. Divide batter evenly into pan. Bake 7-9 minutes or until toothpick inserted comes out clean.
