Brownie Meringue Cookies

- Unsweetened cocoa powder
- Powdered sugar
- Salt + Vanilla
- Chocolate chips

Egg Whites
Egg whites will whip faster and fuller when they are at room temperature. Leave them at room temperature for approx 30 minutes beforehand.
How Do I Know When the Egg Whites are Whipped Enough?
You want your egg whites to achieve soft peaks while whipping. This should take about 5 minutes when you are using a whisk attachment with an electric mixer. When you lift the egg whites on your whisk, they should be firm enough to hold briefly, but, will fall back into the bowl.
Unsweetened Cocoa Powder & Powdered Sugar
You want your cocoa powder and powdered sugar to be as smooth as possible ( no lumps!). So, don’t forget to give them a whisk before adding to the whipped egg whites.
Storage
Keep any leftovers in a covered container. No need to refrigerate, unless the weather in your area if hot/humid.

Brownie Meringue Cookies

These amazing brownie meringue cookies are all about that chocolaty goodness! They have a light and airy texture with a satisfying crispy crunch. Trust me, they're the ultimate partner for a cold glass of milk!
Ingredients
- 2 egg whites, at room temperature
- 1 tsp vanilla
- 1 cup powdered sugar
- 1/3 cup unsweetened cocoa powder
- dash or salt
- 3 TBSP chocolate chips
Instructions
- Preheat oven to 350 degrees. Line a flat rimmed baking sheet with parchment paper or silicone mats.
- In a bowl, whisk together powdered sugar and cocoa powder. Set aside.
- With an electric mixer with whisk attachment, beat egg whites on medium speed, then, add in salt and vanilla.. Continue beating until soft peaks form.
- Fold in half of the powdered sugar/cocoa powder mixture until lightly combined. Then, fold in the remainder of the cocoa powder/powdered sugar until it's mixed completely.
- Lightly fold in chocolate chips.
- Drop or pipe the batter evenly onto the prepared baking sheet.
- Bake for 15-17 minutes or until tops are dry. Then, turn off your oven and let the meringues cool completely before removing. This could be anywhere from 30-60 minutes.
