What Kind of Pancake Mix Can I Use?
Any brand of pancake mix will do the trick. Just be sure to choose a mix that only requires water to make the pancakes.
What About Apple Cider?
Use your favorite! It can be any brand/flavor. If you don’t want to use apple cider or can’t find it, you can use apple juice as a replacement.
Do I Have To Coat Them?
No. These doughnuts are really good just plain. So, if you don’t want to coat them in the cinnamon/sugar mixture, you can skip that step.
Storage?
Keep any leftover doughnuts ( if you have any!) in a covered container. If you wish, you can also freeze them. Store them in a freezer safe, covered storage bag or container. Just let them cool first.
Pancake Mix Apple Cider Doughnuts

Baked apple cider doughnuts with a shortcut! We start with a pancake mix for an easy and delicious fall treat. Apple cider, ground cinnamon and a cinnamon sugar coating...yum overload.
Ingredients
- 2 cups pancake mix
- 1/2 cup brown sugar
- 1 tsp ground cinnamon
- 3 TBSP butter, melted
- 2 eggs
- 3/4 cup apple cider
- splash of vanilla
Coating:
- 1/4 cup butter, melted
- 1 cup sugar
- 2 tsp ground cinnamon
Instructions
- Preheat oven to 425 degrees. Grease a 6 count doughnut pan.
- In a bowl, mix together pancake mix, brown sugar and ground cinnamon. Add in melted butter, eggs, apple cider and vanilla. Mix until combined. Fill doughnut pan cavities about 2/3 full.
- Bake 7-9 minutes or until doughnuts spring back when touched.
- Let the doughnuts cool for about 5-8 minutes. Then, in a small bowl, mix together sugar and ground cinnamon for coating.
- Dip doughnuts in melted butter. Then, coat in cinnamon sugar mixture.
