Dark Chocolate Coconut Almond Bites- -Delicious no bake bites that only require five ingredients and zero refined sugar!


No Refined Sugar?
Recipes do not include white sugar, brown sugar or powdered sugar. Instead, they will be sweetened with honey, maple syrup, or coconut palm sugar. Plus, any chocolate is dark. See the recipe index for even more no refined sugar recipes!

Maple Syrup
I do recommend using real maple syrup. However, I do also realize that it can be quite a bit more expensive than other versions. If you wish, you can use maple flavored syrup instead. Keep in mind, your bites will then include refined sugar. 😉

How To Make Your Bites
- In a food processor or blender, mix shredded coconut until the texture is paste-like. Frequently, scrape down the sides of your processor/blender to make this process go a little easier.
- While mixing, you will add in the vanilla and maple syrup. The coconut should be at paste form. It did take me about 5-8 minutes to reach this consistency.
- Scoop a tablespoon of the mixture and form into a rounded bite. They are a bit fragile, so, take your time and be gentle with it.
- Once your bites are formed, top each with 1 almond. Press it lightly into the bite.
- Then, melt your chocolate chips. You can do this on the stove top or in the microwave. If you are microwaving, do this in 30 second intervals, to prevent burning.
- Dip the bottoms of your bites into the melted chocolate. Then, drizzle the tops with the remaining chocolate.
- You will have to refrigerate your bites for just 30 minutes to set. If you need them to set up faster, place in the freezer instead.

Ingredients
- 2 cups unsweetened shredded coconut
- 2 TBSP maple syrup
- 1 TBSP vanilla
- 12 almonds
- 1/2 cup dark chocolate chips
Instructions
- In a food processor or blender, mix shredded coconut until it forms a paste. Scrape down the sides frequently while mixing. Add in vanilla and maple syrup and mix to combine. The coconut should have the consistency of a paste. If it's still a little dry, add a teaspoon water and mix it in well.
- Scoop a tablespoon of the mixture and gently form into a round bites. Place on a parchment lined flat rimmed baking sheet. Once formed, gently press an almond into the middle of the bite. Continue with remaining coconut mixture and almonds.
- In a microwave safe bowl, melt chocolate chips. Do this in 30 second intervals, to prevent burning. Once chocolate is melted and smooth, dip the bottoms of your bites into the melted chocolate. Then, drizzle tops with remaining melted chocolate.
- Refrigerate bites for at least 30 minutes before serving to set. Keep leftovers in refrigerator.
