Chicken Broccoli Fettuccine Freezer Meal Prep

Some weeknights there is no energy left for a pot of boiling water, let alone a cutting board. That is when this chicken broccoli fettuccine earns its spot in the freezer.
It takes about 40 minutes to prep five meals, and each one is frozen as separate blocks of pasta, chicken, and broccoli.
On a busy day you drop three blocks into a bowl, reheat, add cheese, and dinner is ready in about five minutes.

Why Freeze Each Part Separately
Pasta, chicken, and broccoli all freeze differently. Toss them together in sauce and freeze one big container, and the pasta goes soft, the broccoli turns watery, and the chicken dries out.
Freezing them as separate blocks fixes all three.
- The pasta stays springy because it is cooked a little short and coated in garlic butter.
- The broccoli stays bright green because it is blanched for just a minute and cooled fast.
- The chicken stays juicy because it is seared in small pieces and frozen without extra liquid.
- You control the ratio. Hungrier tonight? Grab an extra chicken block.
Ingredients
For the pasta
- 10 oz (283 g) fettuccine (linguine or penne work too)
- 2 tbsp (28 g) butter
- 3 cloves (15 g) garlic, finely minced
- 1/2 tsp (3 g) salt
For the chicken
- 1 1/2 lb (680 g) boneless, skinless chicken breast, cut into bite-size pieces (thighs stay even juicier)
- 1 tbsp (14 g) olive oil
- 1 tsp (3 g) garlic powder
- 1 tsp (1 g) Italian seasoning
- 3/4 tsp (4 g) salt
- 1/2 tsp (1 g) black pepper
For the broccoli
1 large head broccoli, cut into small florets, about 4 cups (350 g) (frozen florets are fine, skip the blanching)
For serving
- 3 tbsp (15 g) shredded Parmesan or mozzarella per meal
- Freshly cracked black pepper
- 1 to 2 tbsp milk or water per meal, for reheating
Equipment
- Silicone freezer tray with 1-cup portions (two trays let you freeze all 15 blocks at once)
- Large pot and a large skillet
- Freezer bags or airtight containers
- Microwave-safe glass container for reheating
- Marker for labeling
How to Make Chicken Broccoli Fettuccine Freezer Meal Prep
Do all your chopping before you turn on the stove. Once the water boils, everything moves quickly.
1. Cook the pasta a little short
Bring a large pot of salted water to a boil. Cook the fettuccine for 2 minutes less than the package says, so it is still firm in the middle.
It finishes cooking when you reheat it. Drain, return it to the warm pot, and toss with the butter, garlic, and salt until every strand is coated.
The butter stops the noodles from freezing into one solid lump.
2. Blanch the broccoli
Keep the water boiling. Drop in the broccoli for just 60 seconds, then move it straight into a bowl of ice water.
Once cold, drain and pat dry with a clean towel. Dry broccoli means fewer ice crystals and less sogginess later.
3. Sear the chicken
Toss the chicken with the garlic powder, Italian seasoning, salt, and pepper.
Heat the olive oil in a large skillet over medium-high heat and cook the chicken in a single layer for 6 to 8 minutes, turning once or twice, until golden and cooked through to 165°F.
Work in two batches if the pan is crowded, so the chicken browns instead of steaming.
4. Cool everything completely
Spread the pasta, broccoli, and chicken on separate plates or sheet pans and let them cool to room temperature, 20 to 30 minutes. Do not skip this.
Warm food in the freezer creates steam, frost, and mushy texture.
5. Portion into freezer blocks
Divide each component into 5 equal portions and fill the tray one component per cup: 5 pasta, 5 chicken, and 5 broccoli.
Twirl the fettuccine into a nest with a fork so it fits neatly, then press each portion down so the tops are flat.

These are the 1-cup silicone freezer molds I use to portion every component. Get the freezer molds on Amazon.
6. Freeze and bag
Cover the tray and freeze for 4 to 6 hours, until solid. Pop the blocks out and move them into labeled freezer bags, keeping each type together, and squeeze out as much air as you can. The tray is now free for your next batch.
How to Reheat
One meal is 1 pasta block + 1 chicken block + 1 broccoli block. No thawing needed.
- Put the frozen blocks in a microwave-safe glass container and add 1 to 2 tablespoons of milk or water.
- Cover loosely and microwave on high for 3 minutes.
- Stir and loosen the noodles with a fork, then microwave 1 to 2 minutes more until hot all the way through.
- Top with the cheese and black pepper, cover for 1 minute so it melts, then stir and eat.
Stovetop option: Add the blocks to a skillet with a splash of water, cover, and warm over medium heat for 6 to 8 minutes, stirring as they soften. Add the cheese off the heat.

Storage
Freezer: Up to 3 months in airtight bags.
Fridge: Prepping for just this week? The cooled components keep for 4 days in the fridge.
Do not refreeze anything that has already been reheated.
Tips and Swaps
Make it creamy: Stir 2 tablespoons of cream cheese or a spoonful of jarred Alfredo into the bowl while reheating.
Add brightness: A squeeze of lemon after reheating wakes up the whole bowl.
Add heat: Sprinkle red pepper flakes on top before serving.
Change the veg: Green beans, peas, or cauliflower freeze just as well with the same blanch-and-dry method.
Go gluten-free: Use a gluten-free fettuccine and cook it 3 minutes short, since it softens faster.
